Substitute chicken breast for boneless chicken thighs or a whole chicken if you prefer, after all a whole chicken is what the Grandmas’ originally used for this recipe, so why not.Substitute tagliatelle for wide egg noodles, orzo, rice, or barley.If you are on a low-carb diet then you can substitute egg noodles for zoodle otherwise known as zucchini noodles.I used herbs de Provence but you can also use Italian seasoning or any other herbs of choice.For a creamy version, stir in about ⅓ cup of heavy cream (double cream), sour cream, or half and half toward the end of the cookingAdd more vegetables however you like but make sure to adjust the liquid ratio and season accordingly to accommodate any additional vegetables.If you like your soup on the lemony side add about 2-3 Tablespoons of lemon juice towards the end of the cookingMake it gluten free by omitting the noodles or swap for gluten-free noodles, make sure to cook it according to instructions or however it works for you.
Can I make this soup without celery and carrots
Yes, you can skip the veggies and only use onion. However, celery and carrots will help build flavor in the soup. Pasta Fat: butter and olive oil Mirepoix: carrots, celery, and onion Fresh garlic and ginger Low sodium chicken stock Herbs de Provence Turmeric Chili flakes Salt and freshly cracked black pepper Add Herb de Provence, chili flakes, chopped garlic, and ginger and saute for another 1 minute stirring constantly so that the garlic and ginger do not burn. Pour chicken stock in the mirepoix vegetable, add turmeric, salt, and black pepper to taste, and stir to combine. Add chicken breast pieces, partially place the lid over the pot and bring to a boil for 15-20 minutes or until the chicken breast is tender. Add the shredded chicken back into the pot, stir to combine, and check for salt and other seasonings then adjust to taste. Continue to cook for another minute or two, ladle the chicken noodle soup into a bowl and enjoy. Finish it off with freshly squeezed lemon juice for a bright kick. Freezer: Let the soup cool down before transferring to an airtight freezer-friendly container and store it in the freezer for up to 2 months.
Can I use leftover chicken
