Honey sriracha chicken wings recipe demystified

When I cook chicken wings, I prefer to bake them except when I am pressed for time or making salt and pepper chicken wing. That is one wing recipe I am partial about, it should be fried and not baked. moving on swiftly, today’s wing recipe is baked but it is crispy, yes CRISPY! Thanks to baking powder (not baking soda please) and baking rack. I won’t go into the science of why baking powder makes chicken wings crispy as I plan to make a post on it separately. That said, if you have an air fryer, you can use it to achieve the type of crispiness this recipe calls for. If you would rather fry this recipe, then swap the baking powder for 2 tablespoons of cornflour. What I can tell you today is if you followed this recipe to the T, you won’t regret it. Sounds patronising but it is the truth. I love making honey sriracha wings as it only requires a handful of ingredients (as with most of my recipes) I would also like to say you should not let the name sriracha honey wings scare you, it is actually not that hot or should I say spicy. The honey and the vinegar added to the sriracha balances the heat and that is why this recipe is so good. It is safe for kids too because it falls on the mild scale side of hot sauce. Ingredients you will need to make this recipe

Chicken wings separated into drummlette and winglette Salt Freshly ground black pepper Onion powder Garlic powder Ginger powder Smoked paprika Aluminium free baking powder, please note that baking powder is not the same as baking soda Honey Sriracha Spring onions (green onions) and sesame seeds for garnish Apple cider vinegar, substitute for rice wine or white vinegar

How to make the best honey sriracha chicken wings

Prep the chicken wings: make sure you bring the chicken wing to room temperature before baking. Pat the wings dry with kitchen towel so that it is moist free. Preheat the oven at 160C/320F and line a baking tray with an aluminium foil, then place a baking rack on it. To a small bowl, add smoked paprika, garlic powder, ginger powder, onion powder, baking powder, salt, ground black pepper and mix to combine. Add the spice mix to the chicken wings and mix to combine making sure the wings are well coated with the spice mix. Place the seasoned chicken wings on the baking rack (baking tray) making sure it is not overcrowded for proper air circulation/distribution and bake in the preheated oven for 15 minutes, take it out of the oven and flip to the other side then continue to bake for another 15 minutes. Bring out the wings from the oven one last time, flip sides again and return to the oven and continue to bake for 10 minutes on 180C/365F. Take the chicken wings out of the oven and transfer to a bowl then make the honey sriracha sauce To make the sauce: add the vinegar to the sriracha and mix to combine then pour the mixture into the honey and mix until well combined. Pour the sauce over the baked chicken wings and toss to combine. Garnish with chopped green onions, sesame seeds and serve immediately,  

You might be wondering what is the difference between honey sriracha sauce and sriracha buffalo sauce?

This is the simple analogy below Honey + sriracha = honey Sriracha sauce Sriracha + melted butter = sriracha buffalo sauce. Hot sauce like frank hot sauce is the original recipe used in making buffalo sauce.

How to serve this recipe

Honey sriracha is perfect on its own as an appetiser or side dish. I love to serve mine with homemade chips, plain basmati rice or with this vegetable fried rice.

How to store honey sriracha chicken wings

The simple honest answer is no, don’t do it. Although, you can make the chicken wings ahead and reheat as at when needed then coat with the sauce. That tastes a lot better than storing already coated wings. I would be surprised if you had any leftovers from this.
